Gluten Free Living – 2022
Artichoke Dip is a fantastic five-ingredient appetizer that’s absolutely terrific to bring to tailgating parties or potlucks. This one includes diced green chilies to add a little pizzazz, both mozzarella and parmesan cheeses, artichokes and a little mayo to mix it all together. It’s also gluten free if you use vegetable dippers or gluten free crackers to serve it with.

We went to an Empty Nesters potluck at our church earlier this year. This dip was served as one of the appetizers that night. I loved it from the first bite. I tracked down who brought it and was glad to find out it was someone who lives near us and we sit next to in church almost every week. Linda gave me the recipe and I’ve been wanting to make it for over six months but hadn’t had the opportunity.
Finally, we hosted a sandwich night for our Wednesday night community group. But I wanted to include a few appetizers along with all the sandwich fixings. I made Artichoke Dip along with Pepperoni Pizza Crescent Snacks. We had several appetizers along with sandwiches that night and everything got eaten up pronto! Artichoke Dip is also good for New Year’s Eve and New Year’s Day parties. You should certainly put this on your Super Bowl menu! It’s fantastic.

This five-ingredient recipe is so quick and easy to whip up for company.
Artichoke Dip is gluten free. If you use veggie dippers or gluten free crackers it remains gluten free.
The two cheeses add savory flavors and the diced green chilies provide just enough spice in the mix to keep the dip from being bland or ordinary.
Here’s what I did.
I used these ingredients.
Place artichokes in a small mixing bowl. Add parmesan cheese, mozzarella cheese, diced green chilies and mayonnaise. I used Hellmann’s olive oil mayonnaise which uses healthier oils than regular brands.
Stir ingredients together to combine.
Spoon mixture into a greased 8×8″ glass baking dish (or even smaller is okay).
Cook, uncovered, at 350 degrees for about 45 minutes (or longer) until the top is lightly browned and toasted.
Serve immediately while hot. Use your favorite crackers or veggies to serve the dip with.
Artichoke Dip is great served with Ritz Crackers, Bagel Chips, Wheat Thins or the crackers of your choice.
This is a great appetizer to serve at tailgating parties. Watch it disappear!
I recommend Artichoke Dip for New Year’s Eve & New Year’s Day parties too.

ARTICHOKE DIP
(Recipe adapted from Linda Krull, Providence Church, Frisco, TX)
Artichoke Dip
Equipment
- 1 8×8" glass baking dish or even smaller
- 1 mixing bowl
- 1 wooden spoon
Ingredients
- 1 cup mayonnaise (I used Hellmann's olive oil mayonnaise for healthier oils)
- 1 cup parmesan cheese shredded
- 1 cup mozzarella cheese shredded
- 4 oz. can green chilies partially drained
- 14 oz. can artichoke hearts drained and chopped
Instructions
- Mix all ingredients and spread into a greased 8×8” glass baking dish or round baking dish.
- Cook uncovered at 350° for 45 minutes (or longer) until the top is a little brown and toasted.
