FENNEL, ORANGE & PECAN SALAD

Here’s a simple, cold fighting and delicious salad for you!

This Fennel, Orange and Pecan Salad is balanced with arugula and naturally sweet due to its vinaigrette that is made with fresh squeezed orange juice.

The ingredients and preparation is straight forward which will only take you 15 minutes to complete. 
If you are a fennel lover like I am, you’ll appreciate the flavour of a refreshing, zing salad with a crunch. The citrus and honey mustard dressing ties it all together perfectly.

Ingredients

  • 1 fennel
  •  1 orange
  •  1 pomegranate
  •  1/2 cup of pecans
  •  2 cups of arugula

Citrus and honey mustard vinaigrette

  • 3 tbsp of orange juice
  • 2 tbsp of lemon juice
  • 1 tbsp of red wine vinegar
  • 1 tbsp of honey mustard
  • 1 tbsp of honey
  • 1/3 cup of olive oil
  • Add: Salt and pepper to your tasting.

This salad is a great way to add some freshness to your meal and is perfect for a light lunch or as a side dish to a main course.

Fennel, Orange and Pecan Salad is a refreshing and flavorful salad that combines the unique taste of fennel with the sweetness of oranges and the crunch of pecans.

Ingredients

-1 fennel

-1 orange

-1 pomegranate

-1/2 cup of pecans

-2 cups of arugula

Citrus and honey mustard vinaigrette

-3 tbsp of orange juice

-2 tbsp of lemon juice

-1 tbsp of red wine vinegar

-1 tbsp of honey mustard

-1 tbsp of honey

-1/3 cup of olive oil

-Add: Salt and pepper to your tasting.


Directions

  1. Cut the top and bottom of the orange with the knife, then slice off the skin on all sides of the orange.
  2. Once all the skin has been removed, place the orange on its side, then slice through the orange from top to bottom making a circular ring.
  3. Remove the pulp and deseed you’re pomegranate.
  4. Place your salad ingredients in a large salad bowl.
  5. In a separate small bowl, whisk together the orange juice, lemon juice, honey mustard, honey, salt and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  8. Serve and enjoy!
