Ingredients
- 4 tablespoons of hummus ($0.4)
- 2 tortillas ($0.5)
- 1/2 onion ($0.5)
- 1/2 cucumber ($0.5)
- 1 cup of shredded carrots ($0.4)
- 1 cup of spinach ($0.5)
- 1 cup of beetroot ($0.3)
- Salt and pepper to taste ($0.05)
Instructions
- Chop the onion, cucumber and beetroot into strips.
- Lay two tortillas on a flat surface and spread 2 tablespoons of hummus on each tortilla. Spread well across the tortilla.
- On one side of the tortilla, layer the chopped vegetables, shredded carrots, and spinach. Spread the veggies evenly across the side. Season with salt and pepper.
- Roll the tortilla into a wrap – starting with the side with the veggies.
