That casserole up there 👆 has all the delicious flavors of tacos. This extra-cheesy dish is ready in under 25 minutes and is packed with protein and fat while being low in carbs.

  • 80/20 ground beef
  • Red onion, chopped
  • Garlic, chopped
  • Red bell pepper, chopped
  • Keto Taco Seasoning
  • Sugar-free salsa
  • Sour cream
  • Shredded Cheddar cheese (or taco blend)
  • Eggs

How to Make Keto Taco Casserole {Quick Overview}

This is just a quick overview of some of the steps involved in making the low carb taco casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

Preheat oven to 350 F.

Over medium heat, saute ground beef, onion, garlic, and bell pepper (Photo 1) until beef is cooked through and vegetables begin to soften. (Photo 2)

Remove from heat and drain any excess fat (some is okay). Add taco seasoning and stir to incorporate thoroughly. Spoon mixture into a casserole dish (I used a 9” x 9” dish). (Photo 3)

Combine salsa, sour cream, and 1/2 cup shredded cheese in a small bowl. In another bowl, whisk eggs. (Photo 4)

Then, pour eggs into salsa/sour cream/cheese mixture and whisk to thoroughly combine. (Photo 5)

Pour mixture over top of ground beef. (Photo 6)

Place dish in oven and bake for 25 minutes or until cooked through. (Photo 7)

Add remaining 1 1/2 cups cheese and return to oven until the cheese is melted. (Photo 8)

When cheese is melted, remove from oven and cut into six pieces. Serve and enjoy!

How to Lower the Carbs in Keto Taco Casserole

This recipe is a little higher in carbs than most keto recipes I create (10g net carbs per serving). If you need to lower the carbs a bit, here are a few ideas:

Increase the number of servings. This recipe is made with 6 servings that are quite hearty. If you don’t need quite such a hearty portion, increase the servings to 8 servings (7.5g net carbs each), 10 (6g net carbs each), or even 12 (5g net carbs each).

Remove the red onion. Although I love the added flavor of the red onion, if you can do without it, doing so will reduce the net carbs per serving to 8g each.

Intermittent fast. This makes a great and hearty first meal of the day if you’re intermittent fasting! I know this doesn’t actually lower the carbs in the recipe, but it’s more acceptable to consume higher-carb recipes like this one if you’re eating fewer meals.

Can I Eat Taco Casserole on the Keto Diet?

You can eat taco casserole on the keto diet by removing heavy net carb ingredients and substituting them with low carb ingredients. You must avoid using beans, corn tortilla chips, corn, and any other high carb ingredient. These high carb ingredients will knock you out of ketosis. Also, they don’t qualify as low carb either.

How Do I Make Taco Casserole Keto-Friendly?

You can make taco casserole keto-friendly by avoiding high carb ingredients like corn, tortilla chips and beans and substituting them with low carb ingredients like red peppers and extra cheese.
