Meal Prep & Menu Plan for April 18 2022

This post contains affiliate links.  We had Okinamiyaki twice this week because it’s one of my favorite Japanese meals, and I can eat it on the Low Fodmap diet.  Win!  We also tried Beef & Cauliflower Taco Skillet because I had a lot of frozen cauliflower rice to use up, and my family loved it.  They’re not big fans of cauliflower rice, but they couldn’t even tell it was cauliflower in this meal.

Dinner–spaghetti with mushrooms & ground beef, salad

Tuesday

Lunch–Asian Noodles
Dinner–Chicken nuggets, tater tots, salad

Wednesday

Lunch–leftover Beef & Cauliflower Taco Skillet, leftover chicken nuggets
Dinner–Okinamiyaki

Thursday

Lunch–sandwiches, chips, clementine
Dinner–Quesadillas, refried beans, Mexican rice

Friday

Lunch–Trader Joe’s Falafal, hummus, salad, baked potato
Dinner–Salmon, diced potatoes, Brussels sprouts
