Today’s starter is a lemon hummus, based on a recipe by Hugh Fearnley-Whittingstall. I added a little less lemon juice than the recipe, and added fresh coriander to the usual base of blitzed chickpeas, tahini and olive oil. Topped off with a sprinkle of ground cumin, and served up with breadsticks and crudites, accompanied by a glass of prosecco. Mmm! Homemade Hummus | Recipe
Ingredients - 1 can chickpeas (420g)🐥- 2 garlic cloves 🧄- 1 lemon (juice) 🍋- salt 🧂 Optional Ingredients - olives 🫒 (for added salt) - coriander 🌿 METHOD: Drain canned chickpeas and keep chickpea liquid in a separate glass Put garlic, squeezed lemon juice and salt into blender/NutriBullet Add in 1/4 of the chickpea juice Blend until smooth Add more chickpea juice into blender if the mixture is too chunky Add in any other add ons like olives (for saltiness) or coriander etc 🌿 – blend those in Serve 🐥
Sourdough Socca
Since I have a lot of sourdough starter leftover from the pita recipe, I wanted to test out some more flatbreads that I could make with it. So that’s when I decided on socca. Also called farinata, socca is a European flatbread made from chickpea flour(also called garbonzo bean flour!). Because of that, it is usually gluten-free(in this case, mine is not since i used the sourdough), and it gets super crunchy from being baked at high temperatures in a skillet. Hippy Chick Hummus Restaurant
I really, really wanted to like this place. They serve healthy vegan, locally sourced food with an emphasis on green sustainability throughout this casual restaurant. These things, as well as the food, mean a lot to me. The decor is colorful and quirky. I’m always on the lookout for good vegan food, and I love things that are different. Hippy Chick Hummus looks like a fun place to grab a quick bite to eat while shopping or sight-seeing in town, but that was not my experience.
