- 3 Chicken breasts
- 1 tsp of salt
- 1 tsp of pepper
- 1 cup of artichokes (I used a jar of artichokes)
- 1/2 cup of water (You could also use chicken broth)
- 1 cup of coconut milk
- 1 tbsp of garlic powder
- 1 tbsp of mustard
- 1 bay leaf
- 1-2 cups of spinach

Ingredients
-3 Chicken breasts-1 tsp of salt
-1 tsp of pepper
-1 cup of artichokes (I used a jar of artichokes)

Directions
- Preheat the oven to 400F
- Slice your chicken breasts into 1-2 inch thick slices
- Add salt and pepper to the chicken, before sautéing.
- Using a cast iron skillet on medium heat, sauté each chicken side for 1 minute.
- Remove the chicken from the skillet and add in your artichokes, water, coconut milk, garlic and mustard.
- Cook the sauce on medium heat for 4 minutes.
- Add your chicken to your artichoke sauce, followed by adding in a bay leaf.
- Place your chicken in the oven to cook for 25 minutes.
- Remove from the oven and add in your spinach. Stir until combined. Serve and enjoy!
