Preparation
This creamy and flavorful hummus is made with roasted garlic, chickpeas, tahini, and a few other ingredients. To make it, start by preheating your oven to 400°F and slicing off the top of a head of garlic to expose the cloves. Drizzle the exposed cloves with olive oil, wrap the garlic in foil, and roast for 30-35 minutes, or until the cloves are soft and caramelized. Let the garlic cool, then squeeze the cloves out of the skins and into a food processor. Add a can of chickpeas, 2 tablespoons of tahini, 1 tablespoon of lemon juice, and a pinch of salt to the food processor, and blend until smooth. You can serve the hummus immediately or store it in the fridge for up to a week.
