Weekly Meal Plan 12/12/22 – 12/18/22

In this week’s meal plan, we’re mixing in Christmas fun with a few creative breakfast options (don’t miss the gingerbread bacon!) and much more!

Notes from this week’s meal plan:

5 Ingredient Ginger Baked Plums

  • Naturally gluten free and vegan
  • A treat of a breakfast for any day or a great recipe to add to your holiday brunch
  • Only 4 ingredients
  • Add ice cream to make it even more indulgent

Instant Pot Vegetarian Chili

  • This recipe makes plenty for leftovers
  • Eggplant is the ingredient that makes it a hearty chili
  • Customize the recipe to include almost any veggies that you have on hand
  • Serve with with cornbread and avocado as a topping.

Avocado Toast with Hard-Boiled Eggs and Roasted Tomatoes

  • The tomatoes I use in this recipe are these balsamic roasted tomatoes.  The recipe assumes you have already made these.  You can, of course, use raw tomatoes or plain oven roasted tomatoes as well.

Meal Prep Beef Burritos with Zucchini

  • These burritos freeze and reheat very well, so they are ideal for meal prep or dropping off to a new mother (or something similar).
  • Be sure to squeeze out all of the excess liquid from the shredded zucchini – no one will even notice there is a veggie in this!
  • My favorite way to reheat is to microwave first, to ensure the center is warm, and then throw in the air fryer or toaster oven for a little crisp on the outside.

3 Ingredient Cherry Smoothies Recipe

  • Cherries are a great antioxidant and help regulate sleep-wake cycles, among many other benefits.
  • This smoothie tastes a lot like a shake so it might be a good one to give kids who aren’t sold on smoothies quite yet.
  • This recipe makes 2 regular-sized smoothies or 4 smaller ones (great for kids!)

Oven Baked Pork Roast

  • A great, affordable dinner option for Christmas.
  • Simple enough for a weeknight meal, but delicious enough for a holiday.
  • Be sure to have a meat thermometer on hand because cook time will depend on the size of your pork and oven type.  Internal temperature needs to be 145 degrees.
  • When pouring sauce on top of roast, lift the roast so sauce goes underneath and pork doesn’t stick to pan.
  • Once you’re done baking the pork, be sure to serve it alongside its juices so your guests or family can enjoy every bit of that tasty glaze.

Prime Rib Roast and Yorkshire Puddings

  • Another Christmas dinner idea that is a bit more decadent.
  • Again, be sure to have a meat thermometer on hand so you can cook to you preferred temperature.
  • Remove the prime rib from the oven about 10 degrees lower than your ideal doneness.  Then let it rest and rise to the temperature you desire.

Sweet Potato Chickpea Sandwich

  • The sweet potato chickpea spread used in this recipe comes from my Baby Food Cookbook.
  • This spread is a lot like hummus, but with a lighter, fluffier texture.
  • The spread will keep refrigerated, covered or in an airtight container, for up to 1 week.

5 Ingredient Air Fryer Beef Tenderloin Roast Recipe

  • My final suggestion for a Christmas dinner main course.
  • Using an air fryer for this recipe allows you to open it to check the temperature of your meat.
