Oven roasted veggies with toppings - Part 2
I love roasting summer squash and eggplant in the oven, I think roasting these vegetables makes them sweeter, tender, and melt-in-the-mouth! It barely takes 20 minutes at 400 F, if you slice them into thin (but not too thin) slices, drizzled with a dash of olive oil. Once they are roasted, I love topping them with all kinds of sauces. My favorite sauces to top these veggies are: Hummus, either plain or roasted red pepper or garlic hummus Guacamole Yogurt sauce made with plain yogurt, minced or dried garlic, fresh chopped or minced herbs such as mint/cilantro Pesto sauce mixed...
Mediterranean Tofu Cutlets
Can we take a moment to appreciate how good sandwiches are. A double dose of bread? Yes please. Layers of flavor and texture? Yup. A little bit of everything in each bite? That’s what I like to hear. Sandwiches look a bit different for a plant-based or vegan eater, but most sandwiches have an equally satisfying vegan counterpart, and for a lot of my sandwiches tofu cutlets take center stage. By roasting the tofu slabs at a high temperature they turn into hearty, chewy slabs that are also packed with flavor. Lean Pantry friendly, these Mediterranean-inspired tofu cutlets use only...
Garlic Naan
For me, no Indian restaurant meal is ever complete without warm, butter garlic naan. I love mine piping hot with lots of garlic and enough butter to fill the Pacific Ocean! This amazing recipe is from Host the Toast! She has made this recipe so perfect I could never improve it. I have now made this recipe a gazillion times and have all the measurements memorized. We used to be frozen naan loyalists but this little bit of effort in planning goes a long way! This recipe is super kid friendly, I even managed to get my little cousin in...
Air-fried Zaàtar Crisps
These crisps can be enjoyed with anything – be it hummus, salsa, sour cream or even vegan yogurt! Oh, and even as they are! I got an air-fryer in March, and it’s been a blessing. And once I began to share my air-fryer recipes online, I know 7 people in my close family/friend circle who’ve bought it too 😂😂. This recipe is super easy – literally someone like my dad who doesn’t enter the kitchen can whip these up! Ingredients 2 No.s Grocery bought Arabic bread (I used Modern Bakery’s- check the ingredients though because sometimes some brands’ contain milk)...
Hummus Yogurt Dipping Sauce
Store-bought hummus can be too strong for my kids’ taste buds. Adding creamy non-dairy yogurt helps make it just right! Ingredients: 1 (15-ounce) can chickpeas, undrained 2 peeled garlic cloves 1/2 cup + 1 tablespoon plain non-dairy yogurt 1 tablespoon lemon juice 1 teaspoon salt 1/2 teaspoon cumin Combine all ingredients in a blender and process until smooth. Refrigerate until ready to serve. We love this served with pita chips!
