Whole Wheat Wraps with Hummus, Sauteed Veggies, and Buffalo Tofu
I bake extra-firm tofu tossed with a dash of olive oil at 400 F for 25-30 minutes, then toss with Buffalow sauce. I saute onions, bell-peppers and summer squash with olive oil, salt and pepper. I warm up a whole wheat tortilla for 20 seconds in the microwave oven just to soften it, then spread roasted red-pepper hummus in the center of the wrap, top with the sauteed vegetables and raw baby spinach and avocado, add the buffalo tofu, fold all 4 corners of the tortilla towards the center (like a burrito).
